15 Warm And Cozy Soups To Make Right Now

There are few things we love more than spending a cold afternoon in the kitchen, preparing a hearty soup. We've got all sorts of winter warmers, from noodle soups to creamy purees–all you need is some crusty bread for dunking.

ASIAN-STYLE TURKEY AND CABBAGE NOODLE SOUP

INGREDIENTS

  • 1 tablespoon vegetable oil
  • 3 cloves garlic minced
  • 2 cups shiitake mushrooms stemmed and sliced
  • 1 pkg sodium-reduced chicken broth
  • 2 cups shredded cooked turkey
  • 2 cups finely shredded cabbage
  • 1 cup frozen corn kernels
  • 1 tablespoon sodium-reduced soy sauce
  • 1 tablespoon lime juice
  • 2 teaspoons fish sauce
  • 2 teaspoons sesame oil
  • 4 green onions sliced
  • 2 pkg noodles
  • 1/3 cup fresh cilantro leaves torn

METHOD

In Dutch oven or large heavy pot, heat vegetable oil over medium heat; cook garlic, stirring, until fragrant, about 1 minute. Add mushrooms; cook, stirring occasionally, until softened, about 2 minutes. Stir in broth and 3 cups water; bring to boil. Add turkey and cabbage; reduce heat and simmer, stirring occasionally, until turkey is heated through and cabbage is softened, about 5 minutes.

Add corn; cook until heated through, about 2 minutes. Stir in soy sauce, lime juice, fish sauce, sesame oil and green onions.

Meanwhile, in large pot of boiling water, cook noodles according to package directions; drain and stir into soup. Top with cilantro.
